#Healthy #vegan #chocolate #peanutbutter #fudge with a side of oatmeal for breakfast! I swear it’s healthy! ZERO added sugar! For details and the full recipe, check out Chocolate Covered Katie (one of my favourite blogs for healthy dessert recipes).

Chocolate Peanut Butter Fudge

Ingredients:

  • 2 T peanut butter
  • 2 T coconut butter or homemade coconut butter (I tried and failed to make my own… the blender started smoking. I guess it couldn’t handle being on for 5 minutes straight lol, but that’s a story for another day… so I used store-bought coconut oil and it worked)
  • 2 T cocoa powder (10g)
  • 80g very-ripe banana (1/2 a medium banana)
  • 1/16 tsp salt (more if using unsalted pb)
  • optional: feel free to add a little sweetener if your bananas aren’t ripe enough (I added in a very small bit of honey)

Combine all ingredients in a food processor or blender (Katie uses the Magic Bullet. I really miss mine… I used a hand-held blender, which worked fine, but I’m really not a fan of those – just envision chocolate splattered everywhere. Not that it was the worst thing lol, I just ate it all. Wow, I really went on a tangent there!)

Scoop into a container or even a little pie pan, and put in the fridge or freezer so it will firm up. (Alternatively, you can eat it soft, like frosting!)
